Christmas dinner can be tricky to do on a budget, but there are a few great staples that will barely make a dent in the bank. Step in, roast potatoes.

They are a Christmas classic that everyone should have on their dinner table, although they can go wrong. No one wants a soggy potato on Christmas day.

As part of our mission to help people serve up a delicious Christmas dinner on a budget, we asked celebrity chefs BOSH! to share their recipe for the perfect roast potatoes.

How to make the perfect roast potatoes

Serves 6

Ingredients

  • 100ml olive oil 
  • 2kg Maris Piper potatoes 
  • 2 tbsp gram flour 
  • 2 rosemary sprigs 
  • Sea salt 

 Method

  • Preheat oven to 190°C 
  • Pour the olive oil onto a large baking tray. 
  • Warm in the oven while you prepare the potatoes. 
  • Peel the potatoes and cut into big chunks. 
  • Put the potato chunks in a large saucepan over a medium heat, cover with water and add a sprinkle of salt. 
  • Bring to the boil.  
  • Once boiling, reduce heat and cook for 2 minutes. 
  • After 2 minutes, drain the water and leave the potatoes to steam for a couple of minutes until completely dry. 
  • Remove the baking tray from the oven and add the drained potatoes (being really careful because the oil will be hot) and mix to coat well. 
  • Roast the potatoes for 25 minutes. 
  • After 25 minutes, stir through the gram flour, a good pinch of sea salt and the rosemary sprigs. 
  • Mix well and roast for another 20-30 minutes, until golden, crispy and delicious.
